It was a long 3 weeks without our CSA, but last week our bi-weekly shipment of winter veg boxes arrived. It was great to again have a bounty of apples, lettuce, butternut squash, carrots and radishes, kale and cabbage. Ahhhh kale and cabbage, cabbage and kale. I'm not gonna lie- I am out of inspiration for cooking cabbage and kale. I consulted my trusty food co-op group and was given recommendations for a few soup recipes using these ingredients. I tried out two and am happy to report they were delish!
First, Kate of
yinzpiration fame, suggested the following. I made a few changes along the way, and was really pleased with the results.
 |
| Steamy! |
"Japanese" (in quotes, cause inspired by but not really attributable to) soup
2 miso soup packets mixed into 2c of water
6c chicken stock
3-4 tbsp low-sodium tamari
3-4 tbsp ponzu
3-4 carrots
1/4 large head of cabbage
3 garlic cloves
1/2 onion
package of Ramen noodles
Then Leah Best-Cook-I-Know Helou recommended this
recipe from godloveit Epicurious.com.
Made it! Delicious!
Kale and cabbage gone. Tummy full. And about 6 servings frozen for later lazy nights. Success!
