I participate in a neighborhood food co-op. A small group of us exchange "staples" each Sunday- homemade sauces, dips, breads, easy dishes, desserts, etc. I participate probably 50% of the time. One Sunday I was not going to miss- Holiday cookie exchange! We each made 2-3 dozen and then swapped. It was amazing! We have almost finished eating our dozens...in a week. Yeah, we shared some, but basically ate them all ourselves.
Hence the reason Im power-walking on our prehistoric aged treadmill each morning. Ahhh but it's worth it!
Reggie and I also made a new dish last week that I think will come into the common rotation: thai green curry cod. But the cod could be replaced with tofu or chicken easily. Its basically green chili paste, coconut cream, potatoes (my addition, not in the recipe), green peppers, onions, garlic. Mix it all together, then pour over the fish/tofu/etc and bake for 20-ish minutes. EASY.
Our neighbors hosted a chili cook-off yesterday during the Steelers game. 4 couples brought chili, we tried them all (stuffing ourselves silly) and then voted. We didn't win, but our cornbread-chili was a hit. We cook ground grass fed beef, stewed tomatoes, beans, chili peppers, salsa, cheese, and then pour cornbread mix (already constituted with all of the ingredients) over the top and bake for 30 minutes. The cornbread sweetness cuts the spicy smokiness of the chili. It's pretty darn good!
